Ingredents: 6 tbsp soya flour 3 tbsp soya milk 1 egg1/2 tsp baking powder 2 tsp sugar substitute 3-4 drops maple extract or vanilla essence watercanned blueberry
Method: Whisk together soya flour, soya milk, baking powder, sugar substitute and one egg yolk to make a batter of dropping consistency. Keep aside for 15 minutes. Whip the egg white until fluffly. Fold into the batter. For the maple syrup, heat some water, maple extract and sugar substitute over a medium flame Heat a pan, spray some olive oil and spoon the batter to make a pancake. Once the underside is half done, sprinkle the blueberries on top and flip. Serve hot sprinkled with sugar substitute or with the maple syrup.
