Ingredents: 2 egg yolks80 gm fine sugar80 ml water2 tbsp gelatine400 ml curd1 tsp lemon rind225 gm non dairy cream- sweetened1 sponge cake-any flavor
Method: In a bowl beat egg yolk and sugar and cook in water bath.In another bowl, dissolve gelatine in water and mix it with egg yolk. Pour curd into this mixture, add lemon rind and mix well. Transfer to a bowl, cool over ice, stirring constantly.As soon as the mixture begins to set, fold in the whipped cream.Pour the set mixture into a flan ring lined with sponge cake and refrigerate for two hours. The cake can be flavored to suit your taste-mango, lemon or orange. De-mould onto a serving dish and serve with fruit puree.
