Ingredents: Sponge cake slices 2 tbsp castor sugar 1 tbsp gelatin 50 gm coffee beans 2 egg yolks 250 gm whipped cream 100 gm chopped walnuts
Method: Scald milk/cream with coffee beans. Whip egg yolks along with sugar. Strain the milk and combine with whipped eggs. Return the coffee custard to a moderate flame and thicken. Add soaked gelatin to the custard. Cool to the point of setting. Fold in the whipped cream. Soak sponge slices in sweetened coffee and place at the bottom of the serving dish. Pour the coffee mixture on top of the sponge base. Serve chilled.
