Ingredents: 350 ml full cream milk 3 eggs - separated 1 tsp ground ginger powder 75 gm castor sugar 1 tsp gelatin 5 tbsp water 2 tbsp sliced sugared ginger 2 tbsp syrup from ginger 125 ml whipped cream
Method: Scald milk. Whip yolks with ginger powder and sugar. Pour on the hot milk, blend and return to pan. Stir continuously until the mixture thickens. Strain. Sprinkle gelatin over water and allow it to soften for 10 minutes. Dissolve over a gentle heat and add to warm custard. Allow it to cool. Bring to setting point. Add ginger, syrup and whipped cream to the custard. Whip whites until stiff. Fold into mixture. Pour into a dish to set. Chill thoroughly, decorate and serve.
