Ingredents: 100 gm butter 100 gm castor sugar grated rind 1 orange Juice 1 lemon 2 eggs 150 gm semolina 2 tsp baking powder 100 gm almond powder 1 tsp cinnamon powder Syrup150 gm sugar juice 1 lemon juice ? orange 1 tbsp candied peel To serve6 tbsp pomegranate kernels 1 tbsp rum/ orange juice mint sprigs
Method: Blend all the cake ingredients together and beat for 1 minute.Turn into a greased and lined 8" round tin and bake ay 210 degrees C for 10 minutes and then for 25 minutes at 180 degrees C. Turn out of tin. Simmer the syrup ingredients together for 5 minutes and pour over cake. Serve with pomegranate mixed with rum. Serve garnished with mint sprigs.
