Ingredents: Sweet Paste100 gm flour 50 gm butter 50 gm castor sugar 2 egg yolks ? tsp vanilla essence Lemon curd200 gm castor sugar 100 gm butter grated rind of 3 lemons juice of 4 lemons 3 eggs
Method: Arrange flour in a ring on a surface. Place butter, sugar, egg yolks and essence in the centre and mix until smooth. Fold in the flour and chill before lining into patty tins. "Bake blind" at 190 degrees C until pastry is cooked. To make the lemon curd, place all ingredients into a heatproof bowl and stir over steam until the mixture thickens. Cool the mixture and spoon into tart cases. Finish with flaked pistachio nuts.
