Ingredents: 4 eggs - separated 300 gm castor sugar (divided into 2 equal parts) 1 tsp vanilla essence 200 ml white wine 150 ml oil 300 gm flour 3 tsp baking powder Sauce 200 ml sweetened mango puree 200 gm cherries whipped cream to serve
Method: Beat yolks with 150 gm sugar and vanilla until light. Beat in wine and oil. Fold in flour and baking powder. Whip whites until stiff and whisk in remaining sugar. Fold into cake mixture. Bake in greased and lined loaf tin at 180 degrees C for about 40 minutes. Decorate with cherries and serve with whipped cream and mango puree.
