Today's Recipe - Baked Eggs with Sardines

Ingredents: 3 hard boiled eggs-shelled2 tbsp butter250 gm tomatoes- skinned, deseeded and roughly chopped1 tin sardines- flaked2 tbsp chopped garden herbs4 tbsp fresh breadcrumbs3 eggs200 ml cream1 tsp prepared mustardsalt and pepper

Method: Quarter the eggs. Melt the butter and pour into a heatproof dish. Add tomatoes to the dish and sprinkle with sardines followed by herbs.Arrange egg quarters over the mixture and sprinkle lightly with breadcrumbs. Season.Beat remaining eggs with cream, seasoning and mustard.Pour over the hard-boiled eggs and bake at 190 degree c for about 20 minutes or until it has set. Serve hot.
