Ingredents: 1 kg mutton/beef-cut into curry sized pieces1cup yogurt2 tbsp ginger-garlic paste2 tsp chilli powder1 tsp turmeric1 cup oil12-15 curry leaves1 tsp cumin1 cup grated onions4 cardamoms and cloves each1 cup grated tomatoes1 cup coconut milkcoriander leaves for garnish
Method: Marinate meat in ginger-garlic paste, chilli powder and turmeric and leave for 5-6 hours. Heat oil and add cumin and curry leaves and then the onions. Stir-fry till onions are brown. Add the cardamoms and cloves and stir-fry till a little dark. Add meat over high heat and stir fry till opaque. Lower the heat and cook till water has been absorbed and fat separates. Add tomatoes and cook till fat separates. Add the coconut milk and water (according to the amount of gravy you want) bring to a boil, simmer for 2-3 minutes and serve hot garnished with the coriander leaves.
